How to Prepare Upma:

  1. Heat oil in a pan and add mustard seeds, urad dal, chana dal, and curry leaves.
  2. Once the mustard seeds start spluttering and the dals turn golden brown, add chopped onions, green chilies, and vegetables of your choice.
  3. Sauté until the vegetables are tender.
  4. Add water in a ratio of 1:2 (1 part vermicelli to 2 parts water) and bring it to a boil.
  5. Add salt to taste and slowly add the Periyar Roasted Vermicelli while stirring continuously to prevent lumps.
  6. Cover and cook on low heat until the vermicelli is soft and cooked through.
  7. Garnish with chopped coriander leaves and serve hot.

How to Prepare Payasam:

  1. Boil milk in a saucepan and add Periyar Roasted Vermicelli.
  2. Let it simmer until the vermicelli is cooked and the milk thickens slightly.
  3. Add sugar, cardamom powder, and any other desired flavorings like saffron or rose water.
  4. Stir well until the sugar is dissolved and the flavors are infused.
  5. Garnish with chopped nuts and serve warm or chilled.
